In a Cold Light of the Day | CHICKEN AND PLANTAIN PEPPER SOUP

Perfect as an appetizer and even best taken on a cold day.

Last year, I was blessed to collaborate with a brand that brought me closer to the reality of my known hobby “cooking”. On one of the tasks, I needed to prepare a dish out of plantains and chicken. It was during the rainy season and I needed to show how creative I am, (at least to my collaborators *hides face). At the time, I was residing in Port Harcourt, Nigeria which is known for its many many rainy days. I had somehow caught a cold and wasn’t feeling my best, but I had also bought all of the ingredients for the task, had them prepped, and refrigerated, but without a particular meal choice in mind. One of those rainy mornings, I happened to be indoors, bored of singularly being at home with not much to do. I remember telling myself, “Why not make a meal out of these ingredients that favor how the weather will make me feel?” I thought something hot, a high-heat roasted meal (but that wouldn’t look great filming over a camera, especially with the weather outside). I finally came to the conclusion of making the Nigerian pepper soup delicacy, but this time with chicken and plantains, and I have to say it was the best choice for the weather and even for my cold. It did feel like a direct immunization injected into my body. All of a sudden, I had my blocked nostrils feeling less choked up, my eyes brighter even! And most importantly a perfect and creative ideal meal for the weather, with a really good cooking execution in film for my collaborators, which of course made me really happy.

The extra heat, the shallots, and the vegetables all gave my pepper soup a top-tier upgrade. That day for sure was not the last day I made Chicken and plantain pepper soup. It became my go-to meal whenever I had a cold, was under the weather, or needed a meal to make everyone feel warm on a rainy day, and there is not a time that it didn’t reign effective! You also can buy into this really accidental but great food hack on days you feel like you need it.
