AS SWEET AS A MANGO

Hello everyone, and welcome to today’s delayed post. I hope everyone’s having a great start to the new month. For me, it’s about to be a long month as I’m going to be somewhat ”en route” all month long, but I do hope it will be a great month all the same for me.

Now that we’ve exchanged pleasantries, let’s waste no time and get into today’s post that I’m so excited about ***hides facee*** 🙂

Mangoesss! The mango season is one that I’ve recently been made to believe that almost everyone loves, (emphasis on “almost”). From mums displaying the big bowls of mangoes, they bagged cheaply at the market, to arguments on whether to eat mangoes with skin on, without skin, and even bants about eating it cut out or eating fruits on the bone (on the bone for context). Anyways, I do also believe that people only create so many bants about foods that have a majority consuming advantage. But hey, let’s not forget that this writer has a thing for mangoes toooooo (hides face 😊).

Remember one of my posts about shopping and taking advantage of seasonal foods? Yes, that one! The grocery shopping hacks article, where I talked about shopping for food in season. I believe that tip comes in handy in today’s post, so here’s me sharing how I adjust my regular meals to accommodate consuming my mangoes which are obviously in season plenty plenty.
So practically, you know how much tasty sweet and spicy chicken is, right? So let’s say I crave sweet and spicy chicken but at the same time, I have the cravings to embrace a new flavor of sweet and spicy chicken. So instead of using sweet sauce and other sweeteners, I substitute those for mangoes and fresh peppers, and the rest is history (that’s if you know how to throw things down in the kitchen, and if you don’t, I’m genuinely sorry for you).

Moving on, I’m just gonna share with you guys the dishes I entirely love making out of mangoes.

The Icon of all my mango cravings is the WHITE RICE AND MANGO CHICKEN SAUCE

The taste of this I must say is PEAKKK! You’d think at first thought “what is that!”. But I bet you, the taste is nothing you’re prepared for in the best way possible. The rice is just plain white rice, some people like their rice sticky, but I prefer mine staying as perfectly cooked. Most importantly, I have a few ingredients I like to add to mine to make my sauce bang and I’ll love to share coz we don’t gatekeep over here ha!

I like to use a cap full of oyster sauce

A cap full of Soy sauce

…And most importantly, cooking wine! I found this really great wine for cooking some months ago at one of my favorite stores at Port Harcourt, Nigeria, and I’ve been ranting so much about how intense the flavor of the wine is. Here’s an image of what it looks like. If you do see it at a store, don’t hesitate to grab a bottle.. really!

Next is the MANGO SLAW

This one’s an easy “piece” to prepare. Just chop a variety of different veggies for a typical salad including your diced mango, you can also add in a squeeze of lemon to give your slaw that punch taste upgrade.

Also, the image below isn’t owned by me as I had little or no time to create graphic contents around all of the mango based meals I have in mind. But trust Lizzy on this, the mango slaw gives you that vibrant and fresh taste you didn’t know you needed!

And lastly THE MANGO SORBET

A dessert! The best option for a hot weather too. All you’ll need are:

Mangoes

Lime juice (very little, about a cap full)

Sweetener (Maple syrup/even caster sugar)

…and water (optional)

All you have to do is pour all ingredients at once into your food processor or blender and blend till silky smooth. I highly recommend using a food processor as you wouldn’t need to add water because of the slow to high speed of a food processor (if you get me). Finally, scoop into a freezer friendly bowl, cover tightly, and freeze till frozen. And there you have it, an healthy dessert perfect for cravings and a hot weather even!

A bonus meal idea is making grilled mango chicken. All you need to do is make use of a mashed up mango paste as the major ingredient for the marinade of your chicken. This one’s similar to the sweet and spicy chicken, but as I said, “if you know how to throw it down in the kitchen, then really good for you!”

I’d like to say that today’s post is nothing like a recipe post, so please don’t ask me for recipes because I really can’t be bothered to give a recipe to measure post for the time being on today’s dishes as life has been lifeing and filming video content + writing recipes in numbers is beyond me for now. The best I’m willing to do is create a recipe card and have it uploaded on my IG, so really great for both of us if you do follow me.
